Homemade Pancake Mix: A Wholesome Breakfast Upgrade
Ever looked at a box of pancake mix and read the ingredients? Not many people do, but it does contain a laundry list of ingredients. I always have this rule of thumb: if the ingredients read like a paragraph, most of them are likely bad for you. That’s why I like making my own mixes. I get to control what goes in and what doesn’t, especially with my Homemade Pancake Mix recipe.
Making your own pancake mix is one of the simplest ways to level up your breakfast game while keeping things wholesome and budget-friendly. Choosing a Homemade Pancake Mix allows us to skip the hydrogenated oils, artificial flavors, excess sugar, and preservatives you can’t even pronounce.

Homemade Pancake Mix
- 1 1/2 cups all-purpose flour
- 3 1/2 teaspoon baking powder
- 1 teaspoon salt
- 1 Tablespoon sugar
- 3 Tablespoons butter, melted
- 1 egg
- 1 1/2 cups milk
Sift together all the dry ingredients in a large bowl. Make a well in the middle of the mix. Add melted butter, egg, and milk. Lightly whisk the batter together until just combined. Batter will have small lumps, which is okay. Let the batter sit 5 minutes while the skillet heats up.
Add a tablespoon of oil to the skillet on medium-high heat. Add 1/4 cup of batter to the skillet. Let cook until bubbles and edges are dry. Flip and continue cooking for 1 to 2 minutes, until golden.
I also use an electric griddle because it is easier to make a large number of pancakes at once. I coat the griddle with cooking spray, then proceed as above, using 1/4 cup of batter for each pancake.
Once you try these, you’ll never want to go back to boxed stuff. The pancakes cook up golden and tender, with just the right amount of rise and flavor. Outside of my biscuits and gravy, this is the most requested breakfast my kids ask for. I love it knowing exactly what’s going into their bodies.
