Homemade Chicken Alfredo

I never buy store-bought Alfredo sauce. The chemical taste and knowing that it’s been sitting on a shelf for who knows how long are off-putting enough. Plus, I am also not a fan of recipes that call for a long list of ingredients, half of which are exotic and hard to find. For anyone craving creamy comfort food, making Chicken Alfredo at home with fresh homemade ingredients is unbeatable. This Homemade Chicken Alfredo recipe stands the test of even the pickiest of eaters. It’s quick, simple, and cost-effective. Bonus: It doesn’t take that very long to make.
Homemade Chicken Alfredo is one of my favorite meals to make at home.
- 2 whole chicken breasts
- Olive oil
- pasta, linguini, penne, or any kind of pasta you like to use.
- 1/2 cup of butter
- 2 cloves of garlic, minced
- 1 cup half and half
- 1 cup shredded parmesan cheese
- 1/4 teaspoon salt
- parsley (optional)
- Cook the pasta according to the directions on the package.
- Pan fry the chicken breasts. I like to butterfly the chicken breasts so that they can cook more evenly. That involves slicing the chicken horizontally almost all the way through and opening it like a book. Add about a tablespoon of olive oil to the pan and heat over medium heat. Once the pan is heated up, add the chicken and sear each side for at least 3 minutes. Cook the chicken until it is cooked through. The thermometer should have a quick read of at least 165 degrees. Remove and set aside. You can cut the chicken into pieces before adding it back to the alfredo sauce.
- In the same pan, melt the butter and add the garlic. Cook until fragrant. Add the half-and-half and whisk. Whisk, whisk, whisk! Once it starts to boil a bit, turn down the heat to low, and add the parmesan cheese. Whisk again! Parmesan cheese should melt, making a nice sauce. You can season the sauce with parsley and salt. Now your Homemade Chicken Alfredo sauce will be perfectly creamy.
- Add the chicken back in the pan with the sauce. Serve right away with the pasta for the best Homemade Chicken Alfredo experience. Your dinner guests will love this classic homemade comfort food!
Sometimes I don’t have half-and-half on hand. You can replace that with half a cup of heavy cream and half a cup of milk. For this Chicken Alfredo, homemade options always taste the creamiest.
